 Ikan salai sejuk beku: Penerimaan di pasaran tempatan

Abstrak

Kajian penerimaan pengguna terhadap produk ikan salai sejuk beku yang dibangunkan MARDI telah dijalankan di Lembah Klang dan Senawang. Seramai 454 responden telah menguji rasa dua produk iaitu ikan salai keli Afrika sejuk beku dan ikan salai patin sejuk beku. Responden menilai warna, aroma, rupa, rasa dan keseluruhan bagi kedua-dua produk ikan salai sejuk beku. Secara keseluruhannya, responden dapat menerima kedua-dua produk ini (81% bagi ikan salai keli Afrika sejuk beku dan 59% bagi ikan salai patin sejuk beku) dengan sedikit penambahbaikan. Sejumlah 67% responden bersetuju dengan harga yang disyorkan bagi ikan salai keli Afrika sejuk beku iaitu RM7.50/300 g manakala hanya 48% responden yang bersetuju pada harga yang disyorkan bagi ikan salai patin sejuk beku iaitu RM8.70/300 g. Hasil kajian ini boleh dijadikan panduan bagi menentukan harga tawaran serta menambah baik produk pada masa akan datang.

Abstract

A consumer acceptance study on frozen smoked fish developed by MARDI was conducted in Klang Valley and Senawang. The 454 respondents were asked to taste two different products namely frozen smoked African catfish and frozen smoked dory. They were asked about their acceptance and preferences towards the product attributes that include colour, aroma, appearance, taste and overall acceptability. The products were well accepted by the respondents (81% for frozen smoked African catfish and 59% for frozen smoked dory) with a little improvement. The study also showed that 67% of respondents agreed with the recommended price for frozen smoked African catfish of RM7.50/300 g while only 48% of respondents agreed on the price of RM8.70/300 g as the recommended price for frozen smoked dory. Consumer acceptance and pricing information could assist in determining the market price and future product development.
